Bite-Sized Homemade Twix Bars

Ingredients

Cookie Layer

  • ½ cup fine blanched almond flour
  • ½ cup vanilla or plain plant protein powder or gluten-free oat flour
  • 5 Tablespoons melted butter
  • 1 Tablespoon refined coconut oil
  • 3 Tablespoons maple syrup

Caramel Layer

  • ½ cup creamy almond butter
  • ¼ cup refined coconut oil
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • a pinch salt

Chocolate Layer

  • 4 ounces dark chocolate chips or chocolate bar
  • 1 Tablespoon refined coconut oil
  • ¼ teaspoon flaky sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a bread pan with parchment paper.
  2. In a small bowl, whisk together the almond flour and protein powder, then mix in the melted butter and maple syrup until combined.
  3. Press the mixture into the base of the prepared pan and bake for 11-13 minutes until golden, then cool completely.
  4. While the cookie layer bakes, prepare the caramel by combining all caramel ingredients in a saucepan over medium-low heat until liquified, then cool.
  5. Once cooled, pour the caramel over the cookie layer and freeze for 20-30 minutes.
  6. Melt the chocolate and coconut oil together in a bowl.
  7. Pour the melted chocolate over the caramel layer and sprinkle with flaky sea salt, then return to the freezer for another 20-30 minutes.
  8. Once set, cut into bite-sized pieces and store in an airtight container.
