Homemade Dulce de Leche Twix Bars

Instructions
- Preheat the oven to 350°F and prepare a 9x13-inch metal baking pan.
- Mix all shortbread crust ingredients until well combined, then press into the pan and bake for 13-15 minutes.
- While the crust cools, make the caramel by heating the caramel ingredients in a pot over medium heat, stirring constantly until it boils, then cook for 10 minutes.
- Remove from heat, stir in vanilla, and pour the caramel over the cooled crust, spreading evenly.
- Refrigerate until the caramel is set, about 30-45 minutes.
- For the ganache, heat the cream until just below a simmer, pour over the chocolate, let sit, then stir until smooth.
- Spread the ganache over the set caramel and refrigerate until firm, about an hour.
- Cut into bars, letting them sit at room temperature briefly for easier slicing.
