Ingredients

The filling

  • 2 tbsp olive oil
  • 2 large onions
  • to taste salt
  • to taste pepper
  • ½ tsp dried thyme
  • 4 ciabatta rolls ciabatta rolls
  • 1 cup Gruyere cheese

The broth

  • 4 cups vegetable broth

Instructions

  1. Heat olive oil in a large skillet on low heat.
  2. Add sliced onions and cook until caramelized, about an hour and fifteen minutes, stirring frequently.
  3. Remove from heat and stir in salt, pepper, and thyme.
  4. Heat a panini press or grill on high.
  5. Divide caramelized onions onto the bottom of the rolls, top each with ¼ cup of cheese, and place the top half of the roll.
  6. Grill for 10–15 minutes or until cheese is melted and bread is golden-brown.
  7. Serve each sandwich with 1 cup of broth.
