Ingredients

The soup

  • ½ stick unsalted butter
  • 3 lbs yellow onions
  • 3 cloves garlic
  • ½ tsp salt
  • ½ tsp pepper
  • 2 leaves bay leaves
  • 3 sprigs thyme
  • 1 cup dry red wine
  • 3 tbsp flour
  • 8 cups beef broth

The toppings

  • 16 slices baguette
  • 2 cups grated gruyere cheese

Instructions

  1. Heat butter in a large Dutch oven over medium-high heat and add sliced onions, cooking for 15 minutes while stirring occasionally.
  2. Add minced garlic, salt, pepper, bay leaves, and thyme, then cook for another 20-30 minutes until onions are caramelized.
  3. Add red wine and let it reduce for about 5 minutes before stirring in the flour.
  4. Incorporate the flour, then add beef broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Preheat the oven to broil.
  6. Serve soup in bowls, topping each with 2 slices of baguette and ¼ cup of gruyere cheese, then broil until bubbly and golden.
