Homemade French Onion Soup

Ingredients

The soup

  • 2 pounds yellow onions, sliced thin
  • 2 tbsp unsalted butter
  • 2 tbsp flour (or gluten-free flour)
  • 1 each bay leaf
  • ½ tsp dried thyme
  • 1 ounce dry sherry
  • 1 ounce Cognac or brandy
  • 2 ounces white wine
  • 9 cups beef broth (store bought or homemade)
  • to taste kosher salt
  • to taste freshly ground pepper

The toppings

  • 6 slices toasted Italian bread (6 ounces), or gluten-free bread
  • 6 slices reduced-fat Swiss cheese, or your favorite cheese

Instructions

  1. Sauté the onions with butter in a Dutch oven over medium heat until soft and golden, about 20 to 30 minutes.
  2. Add flour and mix well for another 2-3 minutes.
  3. Stir in thyme, bay leaf, sherry, wine, and brandy; simmer uncovered for 10 minutes.
  4. Add beef broth, salt, and pepper, reduce heat, cover, and simmer for about 20 minutes.
  5. Remove the bay leaf and ladle the soup into 6 oven-proof bowls.
  6. Place toasted bread rounds in each bowl and top with cheese.
  7. Broil for 2-3 minutes until the cheese melts.
