Homemade French Onion Soup

reduced-fat Swiss cheese, or your favorite cheese
Instructions
- Sauté the onions with butter in a Dutch oven over medium heat until soft and golden, about 20 to 30 minutes.
- Add flour and mix well for another 2-3 minutes.
- Stir in thyme, bay leaf, sherry, wine, and brandy; simmer uncovered for 10 minutes.
- Add beef broth, salt, and pepper, reduce heat, cover, and simmer for about 20 minutes.
- Remove the bay leaf and ladle the soup into 6 oven-proof bowls.
- Place toasted bread rounds in each bowl and top with cheese.
- Broil for 2-3 minutes until the cheese melts.
