Instructions
- Melt the butter and olive oil in a Dutch oven over medium heat, then add the onion slices and sauté until soft and translucent.
- Add the beef broth, dry sherry, and dried thyme. Season with salt and ground black pepper and stir well. Simmer for 30 minutes.
- Ladle the soup into oven-safe ramekins, top with French bread and cheeses, then broil until golden brown.
