Ingredients

The soup

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cups yellow onion, sliced
  • 5 cups beef broth
  • 2 tablespoons dry sherry
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste ground black pepper

The toppings

  • 6 slices French bread
  • 6 slices Provolone cheese
  • 4 slices Swiss cheese, diced
  • ¼ cup grated Parmesan cheese

Instructions

  1. Melt the butter and olive oil in a Dutch oven over medium heat, then add the onion slices and sauté until soft and translucent.
  2. Add the beef broth, dry sherry, and dried thyme. Season with salt and ground black pepper and stir well. Simmer for 30 minutes.
  3. Ladle the soup into oven-safe ramekins, top with French bread and cheeses, then broil until golden brown.
