Classic French Onion Soup

Instructions
- Melt butter in a large pot over medium heat, add onions and salt, cover, and cook for 30 minutes.
- Uncover, reduce heat to low, and cook onions for about 3 hours, stirring occasionally.
- Preheat oven to 200°F and place bread slices inside to dry.
- Once onions are amber, add 6 cups of water, raise heat to high, and bring to a simmer.
- Add sherry and season with salt and pepper; adjust sweetness with vinegar if necessary.
- Preheat broiler, portion soup into bowls, top with bread and cheese, and broil until cheese is melted.
