French Onion Grilled Cheese Sandwich

Ingredients

The filling

  • 1 large red, sweet, or yellow onion
  • 1–2 tablespoons olive oil
  • 1 pinch salt
  • 1 pinch fresh cracked pepper
  • 1 teaspoon fresh thyme (optional)
  • ¼ cup sherry cooking wine, port, or beef stock (optional)
  • 1 cup grated or sliced Gruyere cheese (or meltable vegan cheese)
  • 1 tablespoon whole grain mustard (optional)

The bread

  • 4 slices hearty bread or French bread

The cooking fat

  • 1 tablespoon butter (or sub olive oil)
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté sliced onion for 5 minutes.
  2. Reduce heat to medium-low and continue to sauté for 20 minutes until onions are golden brown.
  3. Add salt and optional liquid (sherry, port, or stock) and let it cook off, then remove onions from the pan.
  4. Spread mustard on bread slices, layer with Gruyere, caramelized onions, thyme, and more cheese, then top with another slice of bread.
  5. Heat butter and olive oil in the skillet, toast the sandwiches until golden brown, then flip to toast the other side.
  6. Transfer to a warm oven to melt the cheese fully, then cut in half and serve.
