French Onion Grilled Cheese Sandwich

Instructions
- Heat olive oil in a skillet over medium heat and sauté sliced onion for 5 minutes.
- Reduce heat to medium-low and continue to sauté for 20 minutes until onions are golden brown.
- Add salt and optional liquid (sherry, port, or stock) and let it cook off, then remove onions from the pan.
- Spread mustard on bread slices, layer with Gruyere, caramelized onions, thyme, and more cheese, then top with another slice of bread.
- Heat butter and olive oil in the skillet, toast the sandwiches until golden brown, then flip to toast the other side.
- Transfer to a warm oven to melt the cheese fully, then cut in half and serve.
