Classic Grilled Cheese with Marinated Onions and Whole Grain Mustard

The marinated onions

Instructions
- Slice the onion thinly and marinate it in vinegar for at least 30 minutes.
- Spread whole grain mustard on one side of each slice of bread.
- Layer the gruyere cheese and marinated onions on one slice of bread, then top with the other slice.
- Heat a panini grill or skillet over medium heat and toast the sandwich until the bread is golden and the cheese is melted.
- Serve hot, optionally with mints for after.
