Favorite Grilled Cheese Sandwich

Ingredients

  • 2 slices whole grain sourdough bread
  • 1 ½ teaspoons Dijon mustard
  • 1 cup freshly grated sharp cheddar cheese
  • 2 teaspoons chopped green onion
  • 2 teaspoons unsalted butter

Instructions

  1. Spread a thin layer of Dijon mustard on one slice of bread.
  2. Mix chopped green onion into the grated cheese and set aside.
  3. Melt butter in a skillet over medium heat and place the mustard side of the bread facing up in the skillet.
  4. Add the cheese mixture on top of the bread, then place the other slice of bread on top.
  5. Cover the skillet and cook until the bottom is golden.
  6. Flip the sandwich, add more butter, and cook until the other side is golden and the cheese has melted.
  7. For a cheesy crust, sprinkle more cheese in the skillet before flipping the sandwich back onto it.
  8. Remove the sandwich, let it cool for a minute, then cut in half and serve.
