Instructions
- Preheat the oven to 400°F.
- In a saucepan, melt 2 tablespoons of butter, then add shallots and thyme, seasoning with salt and pepper. Cook until the shallots soften and caramelize.
- In a large skillet, melt 1 tablespoon of butter and coat the pan. Spread mayonnaise on one side of each slice of bread.
- Place two slices of bread in the skillet and cook until golden brown, then transfer to a baking sheet.
- Repeat with remaining butter and bread slices, then top each with cheese and shallots.
- Bake in the oven until the cheese melts, about 7-8 minutes.
- For the salad, combine arugula, apple slices, lemon juice, and olive oil in a bowl, and season with salt and pepper.
- Assemble the sandwiches, pressing the pieces together, and slice diagonally. Serve with the salad.
