Ingredients

The sandwich

  • 4 tablespoons unsalted butter
  • ¾ cup sliced shallots
  • 1 teaspoon fresh thyme leaves
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • 4 slices white bread
  • to taste mayonnaise
  • 8 ounces Gruyère or Comté cheese

The apple salad

  • 2 cups arugula
  • ½ apple apple (such as Pink Lady or Fuji)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Preheat the oven to 400°F.
  2. In a saucepan, melt 2 tablespoons of butter, then add shallots and thyme, seasoning with salt and pepper. Cook until the shallots soften and caramelize.
  3. In a large skillet, melt 1 tablespoon of butter and coat the pan. Spread mayonnaise on one side of each slice of bread.
  4. Place two slices of bread in the skillet and cook until golden brown, then transfer to a baking sheet.
  5. Repeat with remaining butter and bread slices, then top each with cheese and shallots.
  6. Bake in the oven until the cheese melts, about 7-8 minutes.
  7. For the salad, combine arugula, apple slices, lemon juice, and olive oil in a bowl, and season with salt and pepper.
  8. Assemble the sandwiches, pressing the pieces together, and slice diagonally. Serve with the salad.
