Havarti, Mozzarella, and Caramelized Onion Grilled Cheese

Instructions
- Prepare the caramelized onions by slicing the onion thinly and cooking it in a pan with butter, olive oil, and salt over medium heat for 30-40 minutes until golden brown.
- Spread butter on one side of each slice of bread.
- In the same pan, place two slices of bread butter side down and layer with Havarti cheese, caramelized onions, and mozzarella cheese.
- Top with the remaining slices of bread, butter side up, and cover the pan.
- Cook for 2-3 minutes until the bottom is browned, then flip carefully and cook for another 3-4 minutes until the cheese is melted and the bread is dark brown.
- Remove from the pan, let rest for a minute, then slice and serve.
