Havarti, Mozzarella, and Caramelized Onion Grilled Cheese

Ingredients

The sandwich

  • 4 slices Bread (such as Italian or sourdough)
  • 4 tbsp Caramelized Onion Butter
  • 4 tbsp Caramelized Onions
  • 4 oz sliced Havarti Cheese
  • 2 oz sliced or shredded Mozzarella Cheese

For caramelized onions

  • 1 medium yellow onion
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • ½ tsp fine sea salt

Instructions

  1. Prepare the caramelized onions by slicing the onion thinly and cooking it in a pan with butter, olive oil, and salt over medium heat for 30-40 minutes until golden brown.
  2. Spread butter on one side of each slice of bread.
  3. In the same pan, place two slices of bread butter side down and layer with Havarti cheese, caramelized onions, and mozzarella cheese.
  4. Top with the remaining slices of bread, butter side up, and cover the pan.
  5. Cook for 2-3 minutes until the bottom is browned, then flip carefully and cook for another 3-4 minutes until the cheese is melted and the bread is dark brown.
  6. Remove from the pan, let rest for a minute, then slice and serve.
