Ingredients

Sloppy Joe Filling

  • 1 pound Lean ground beef
  • 1 tablespoon Olive oil
  • ¼ cup Onion, small dice
  • 1 clove Garlic, minced or pressed
  • ¼ cup Tomato paste
  • 1 tablespoon Yellow mustard
  • 2 teaspoon Red wine vinegar
  • 2 teaspoon Worcestershire sauce
  • 1 cup Beef broth

Peppers

  • 2 large Bell peppers, halved lengthwise

Cheese

  • cups Sharp cheddar cheese, shredded

Instructions

  1. Preheat the oven to 375°F and prepare the baking rack.
  2. Heat a medium frying pan over medium heat, add olive oil, and then the ground beef, breaking it into small pieces and cooking until almost done.
  3. Add onions and garlic to the pan and cook for 1 minute.
  4. Stir in tomato paste, mustard, vinegar, Worcestershire sauce, and beef broth, then let it simmer until most of the liquid is absorbed.
  5. While the filling simmers, steam the cut peppers in a microwave-safe dish for 3-4 minutes until softened.
  6. Mix 1 cup of cheese into the sloppy Joe mixture and stuff the peppers with this filling.
  7. Bake the stuffed peppers for 20-30 minutes until hot and bubbly, then top with remaining cheese and return to the oven until melted.
  8. Serve with a green salad.
