Ingredients

The filling

  • 1 lb Lean ground beef
  • 1 tbsp Olive oil
  • ¼ cup Onion, small dice
  • 1 clove Garlic, minced or pressed
  • ¼ cup Tomato paste
  • 1 tbsp Yellow mustard
  • 2 tsp Red wine vinegar
  • 2 tsp Worcestershire sauce
  • 1 cup Beef broth

The peppers

  • 2 large Bell peppers, halved lengthwise

The cheese

  • cups Sharp cheddar cheese, shredded

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish.
  2. In a medium frying pan, heat olive oil and cook the ground beef until almost cooked through.
  3. Add onions and garlic, cooking for an additional minute.
  4. Stir in tomato paste, mustard, vinegar, Worcestershire sauce, and beef broth, then simmer until the liquid is mostly absorbed.
  5. While the filling simmers, steam the halved peppers in a microwave-safe dish for 3-4 minutes until softened.
  6. Mix 1 cup of cheese into the sloppy Joe mixture and stuff the peppers with this filling.
  7. Bake the stuffed peppers for 20-30 minutes until hot and bubbly, then top with remaining cheese and return to the oven until melted.
  8. Serve with a green salad and refrigerate any leftovers.
