Sloppy Joe Stuffed Peppers

Instructions
- Preheat the oven to 375°F and prepare a baking dish.
- In a medium frying pan, heat olive oil and cook the ground beef until almost cooked through.
- Add onions and garlic, cooking for an additional minute.
- Stir in tomato paste, mustard, vinegar, Worcestershire sauce, and beef broth, then simmer until the liquid is mostly absorbed.
- While the filling simmers, steam the halved peppers in a microwave-safe dish for 3-4 minutes until softened.
- Mix 1 cup of cheese into the sloppy Joe mixture and stuff the peppers with this filling.
- Bake the stuffed peppers for 20-30 minutes until hot and bubbly, then top with remaining cheese and return to the oven until melted.
- Serve with a green salad and refrigerate any leftovers.
