Ingredients

The meatballs

  • 1 lb raw 99% lean ground turkey breast or lean ground chicken breast
  • 1 large egg
  • cup plain breadcrumbs
  • 3 tablespoons grated Parmesan cheese
  • 1 ½ tablespoons skim milk
  • 2 ½ teaspoons Italian seasoning
  • ¼ teaspoon garlic powder

The sauce and vegetables

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium zucchini, shredded
  • 2 cloves garlic, minced
  • 1 ½ cups reduced sodium chicken broth
  • 15 oz can tomato sauce
  • 24 oz jar pasta sauce
  • ½ teaspoon dried basil
  • ¼ teaspoon salt

The pasta

  • 12 oz elbow macaroni

Instructions

  1. Combine the meatball ingredients in a bowl and mix until well combined.
  2. Roll the mixture into 50 small meatballs.
  3. Heat olive oil in a pot and brown the meatballs in batches.
  4. Remove the meatballs and sauté the onion and zucchini until softened.
  5. Add garlic and cook briefly before adding broth, tomato sauce, pasta sauce, remaining Italian seasoning, basil, and salt.
  6. Return the meatballs to the pot with uncooked macaroni and stir to combine.
  7. Bring to a boil, then reduce heat and simmer until pasta is cooked and sauce thickens.
  8. Let sit for a few minutes before serving.
