Instructions
- Preheat the oven to 350°F and prepare a 12-cup muffin tin with cooking spray.
- In a skillet, heat olive oil and sauté diced onions until softened, then add minced garlic and cook briefly.
- In a large bowl, combine Italian seasoning, breadcrumbs, Parmesan cheese, the onion mixture, eggs, and 1½ ounces of pepperoni.
- Add ground beef and sausage to the mixture and combine thoroughly.
- Divide the meat mixture evenly into the muffin tin cups and top with pizza sauce.
- Bake for 20 minutes, then remove from the oven, sprinkle with shredded mozzarella, and add remaining pepperoni on top.
- Return to the oven and bake for an additional 5 minutes, then allow to cool for 5 minutes before serving.
