Chicken Parmesan Meatloaf Muffins

Ingredients

The meat mixture

  • 1 ½ lbs raw ground chicken breast
  • 1 large egg
  • 1 large egg white
  • 6 tablespoons dried breadcrumbs
  • ¾ teaspoon dried basil
  • ¾ teaspoon dried thyme
  • ¾ teaspoon oregano
  • 2 cloves garlic, minced
  • ½ small onion, chopped small or grated
  • ¾ teaspoon salt
  • teaspoon black pepper
  • ¾ cup Parmesan cheese

The topping

  • ¾ cup pasta sauce
  • ¾ cup 2% reduced fat shredded Mozzarella cheese

Optional garnish

  • to taste dried parsley, oregano or basil

Instructions

  1. Preheat the oven to 350°F and lightly mist a muffin tin with cooking spray.
  2. In a large bowl, combine the ground chicken, egg, egg whites, breadcrumbs, basil, thyme, oregano, garlic, onion, salt, pepper, and Parmesan cheese. Mix lightly without overhandling.
  3. Evenly distribute the meat mixture into the 12 cups of the prepared muffin tin.
  4. Spread the pasta sauce evenly over the tops of each muffin.
  5. Bake for 20 minutes, then remove from the oven.
  6. Top each muffin with about a tablespoon of shredded cheese and return to the oven for 2-3 minutes until the cheese is melted.
  7. Garnish with optional herbs if desired.
