Ingredients

The meatballs

  • 1 pound ground chicken
  • ¼ cup panko bread crumbs
  • ¼ cup grated pecorino or parmesan cheese
  • 1 each egg
  • 2 teaspoons Italian seasoning
  • to taste none kosher salt and pepper

The crostini

  • 1 loaf whole grain french bread, sliced
  • 3 tablespoons olive oil
  • ½ cup fresh basil, chopped
  • 1 cup marinara sauce
  • 8 ounces mozzarella cheese
  • to taste none fresh basil and/or arugula for serving

Instructions

  1. Combine ground chicken, bread crumbs, pecorino, egg, Italian seasoning, salt, and pepper in a bowl and form into meatballs.
  2. Preheat the oven to 375°F.
  3. Arrange bread slices on a baking sheet, drizzle with olive oil, and sprinkle with fresh basil. Bake until toasted.
  4. Heat olive oil in a skillet and cook meatballs until golden brown.
  5. Top each toasted bread slice with marinara, a meatball, and mozzarella. Bake until cheese is melted.
  6. Serve warm, garnished with fresh basil and extra parmesan.
