Instructions
- 1. Preheat the oven to 350°F.
- 2. Heat olive oil in a large nonstick skillet over medium-high heat and sauté onion, carrot, oregano, and garlic for 2 minutes.
- 3. In a large bowl, mix together ½ cup of ketchup, ground beef, crushed saltines, mustard, Worcestershire sauce, pepper, eggs, and the sautéed onion mixture until well combined.
- 4. Spray a 12-cup muffin pan with cooking spray and evenly distribute the meatloaf mixture into the cups.
- 5. Top each muffin with 2 teaspoons of ketchup.
- 6. Bake for 25 minutes, then let stand for 5 minutes before serving.
