Ingredients

The meatloaf mixture

  • 1 teaspoon olive oil
  • 1 cup finely chopped onion
  • ½ cup finely chopped carrot
  • 1 teaspoon oregano
  • 2 cloves garlic, minced
  • pounds 95% lean ground beef, raw
  • 24 pieces finely crushed fat-free saltine crackers
  • 2 tablespoons mustard
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon freshly ground black pepper
  • 2 large eggs

The topping

  • 1 cup ketchup, divided

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Heat olive oil in a large nonstick skillet over medium-high heat and sauté onion, carrot, oregano, and garlic for 2 minutes.
  3. 3. In a large bowl, mix together ½ cup of ketchup, ground beef, crushed saltines, mustard, Worcestershire sauce, pepper, eggs, and the sautéed onion mixture until well combined.
  4. 4. Spray a 12-cup muffin pan with cooking spray and evenly distribute the meatloaf mixture into the cups.
  5. 5. Top each muffin with 2 teaspoons of ketchup.
  6. 6. Bake for 25 minutes, then let stand for 5 minutes before serving.
