Paleo Vegan Pancakes

Ingredients

  • 1 cup almond flour
  • ¾ cup tapioca flour
  • 1 Tbsp. baking powder
  • ¼ tsp. sea salt
  • cup unsweetened almond milk
  • 2 tsp. apple cider vinegar
  • 1 Tbsp. maple syrup
  • 1 Tbsp. coconut oil, melted
  • 1 tsp. pure vanilla extract

Instructions

  1. Blend all ingredients until smooth, scraping the sides as needed.
  2. Adjust the consistency by adding more liquid or flour if necessary.
  3. Heat a greased skillet over medium heat and pour about a scant ¼ cup of batter for each pancake.
  4. Cook until bubbles form, then flip and cook until golden brown.
  5. Allow to cool slightly before serving with desired toppings.
