Ingredients

  • ½ cup almond butter
  • ½ cup unsweetened applesauce or mashed banana
  • 2 large eggs
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. In a medium bowl, combine all ingredients and whisk until smooth.
  3. For pan frying, heat a greased skillet over medium-low heat.
  4. Scoop ¼ cup of batter into the skillet and cook until bubbles form, then flip and cook until golden.
  5. For baking, scoop the batter onto the lined baking sheet to form about 6 pancakes.
  6. Bake for 10-12 minutes until fluffy and golden.
  7. Serve warm with your favorite toppings.
