Ingredients

The brisket

  • 2.5 pounds beef brisket

The seasonings

  • to taste salt
  • to taste pepper
  • to taste Fajita seasoning
  • to taste Taco seasoning

For searing

  • 2 tablespoons lard

Instructions

  1. Preheat the SousVide Supreme to 147°F.
  2. Season the beef brisket with salt, pepper, and the Fajita and Taco seasonings.
  3. Vacuum-seal the seasoned brisket.
  4. Submerge the sealed brisket in the water oven and cook for 48 hours.
  5. After cooking, remove the brisket and place it in an ice bath for 1 hour.
  6. Reheat the brisket in the SousVide Supreme set to 140°F for about 30 minutes.
  7. Heat lard in a large cast iron skillet and sear the brisket on all sides for about 2 minutes each side.
  8. Slice and serve the brisket.
