  3. 3. Rub both sides of the brisket with salt and pepper.
  4. 4. Apply your choice of seasoning, ensuring even coverage.
  5. 5. Place the brisket fat-side-up inside the smoker and close the lid.
  6. 6. Smoke until the internal temperature reaches 195°F, then remove and let it rest for 20-30 minutes.
  7. 7. Thinly slice the brisket and serve with your favorite sides.
