Instructions
- 1. Place the meat fat-side-up on a chopping board.
- 2. Trim the excess fat, leaving about ¼ inch to retain moisture.
- 3. Rub both sides of the brisket with salt and pepper.
- 4. Apply your choice of seasoning, ensuring even coverage.
- 5. Place the brisket fat-side-up inside the smoker and close the lid.
- 6. Smoke until the internal temperature reaches 195°F, then remove and let it rest for 20-30 minutes.
- 7. Thinly slice the brisket and serve with your favorite sides.
