Instructions
- Trim excess fat from the brisket, keeping some fat for flavor.
- Coat the brisket generously with the rub, salt, and pepper, then refrigerate for at least 30 minutes.
- Preheat the smoker to 175 degrees.
- Place the brisket in the smoker, fat side down, and smoke until it reaches 175 degrees internally.
- Remove the brisket, drizzle with butter and apple cider vinegar, then wrap tightly in butcher paper or foil.
- Increase the smoker temperature to 250 degrees and cook until the brisket reaches 203-205 degrees internally.
- Allow the brisket to rest in the wrap for at least 30 minutes before slicing.
