Ingredients

The brisket

  • 3 pounds beef brisket

The rub and seasoning

  • ½-1 cup BBQ or pork rub
  • to taste salt
  • to taste pepper

The finishing touches

  • 2 tablespoons melted butter
  • 1-2 tablespoons apple cider vinegar
  • as needed butcher paper or foil

Instructions

  1. Trim excess fat from the brisket, keeping some fat for flavor.
  2. Coat the brisket generously with the rub, salt, and pepper, then refrigerate for at least 30 minutes.
  3. Preheat the smoker to 175 degrees.
  4. Place the brisket in the smoker, fat side down, and smoke until it reaches 175 degrees internally.
  5. Remove the brisket, drizzle with butter and apple cider vinegar, then wrap tightly in butcher paper or foil.
  6. Increase the smoker temperature to 250 degrees and cook until the brisket reaches 203-205 degrees internally.
  7. Allow the brisket to rest in the wrap for at least 30 minutes before slicing.
