Instructions
- Trim excess fat from the brisket, leaving a thin layer.
- Completely cover the brisket in BBQ rub.
- Cover the brisket and refrigerate for 10 to 12 hours.
- Preheat the smoker to 250 degrees F.
- Insert a meat thermometer into the brisket and place it fat side down in the smoker.
- Smoke the brisket until it reaches an internal temperature of 170 degrees F, which may take 4-5 hours.
- Remove the brisket and wrap it in foil or peach butcher paper.
- Return the brisket to the smoker until it reaches 200 degrees F, which may take 9-10 hours.
- Let the brisket rest for 10 minutes covered, then 5 minutes uncovered.
- Slice the brisket against the grain and serve with BBQ sauce.
