Ingredients

The Brisket

  • 4 lb Brisket point

The Rub

  • 2 tbsp beef base
  • 2 tbsp garlic salt
  • 2 tbsp fresh ground pepper
  • 2 tbsp chile powder
  • 1 tbsp light brown sugar
  • 1 tbsp smoked paprika

Wrap Sauce

  • 2 tbsp light brown sugar
  • 2 tbsp chopped shallots
  • 2 tbsp apple juice or sweet tea

The Glaze

  • ¾ cup BBQ sauce
  • 2 tbsp light brown sugar
  • 1 tbsp apple cider vinegar

The Wood

  • 1 part hickory
  • 2 parts apple

Instructions

  1. Score the brisket and rub beef base into it on all sides, then apply the rub mixture and refrigerate overnight.
  2. Prepare the smoker or grill for indirect heat at 225°F, adding the wood for smoking.
  3. Place the brisket on the smoker and smoke until it reaches 170°F, approximately 7.5 hours for a 5 lb brisket.
  4. Wrap the brisket in foil with the wrap sauce and cook until it reaches 190°F, about 2 hours.
  5. Remove the brisket from the foil, apply the glaze, and cook for an additional 20 minutes.
  6. Let the brisket rest in foil for 30 minutes before slicing against the grain.
