Authentic Thai Green Curry Paste

Ingredients

The paste ingredients

  • 2–4 chiles serrano chiles
  • 1 large shallot
  • 2 stalks lemongrass
  • 3 tablespoons galangal
  • 2 leaves kaffir lime leaves
  • 5 cloves garlic
  • 2 teaspoons coriander seeds
  • ½ teaspoon white pepper
  • 1 cup fresh Thai basil leaves or cilantro
  • 1 teaspoon salt

The oil and optional ingredients

  • 3 tablespoons olive or peanut oil
  • 2–3 teaspoons shrimp sauce or paste

Instructions

  1. Chop and prep all the ingredients.
  2. Place all ingredients except the oil and shrimp paste in a food processor and pulse until finely chopped.
  3. Add oil and shrimp paste and blend into a paste, scraping down the sides as needed.
  4. Store in a jar in the fridge.
