Instructions
- Blend the peeled and sliced pears with water or apple juice until smooth.
- Simmer the pear puree with mulling spices, cinnamon, ginger, and vanilla for 15 minutes.
- Remove from heat, mix in maple syrup or honey, cool, and strain the syrup.
- Coat the rim of glasses with egg white and dip in sugar.
- Pour ¼ cup of pear syrup into each glass followed by sparkling wine or ginger ale, and stir in bourbon if using.
- Add ice if desired and garnish with fresh herbs before serving.
