Red Wine Poached Pears

Instructions
- Peel the pears and slice a little off the bottom for stability.
- In a pot, combine the wine, orange zest and juice, sugar, vanilla, cinnamon, cloves, nutmeg, cardamom, and beet slices. Bring to a simmer.
- Add the pears to the pot, bring to a boil, then reduce heat and simmer uncovered, turning pears occasionally, until tender (about 25 minutes).
- Transfer the pears to a plate and strain the poaching liquid.
- Reduce the strained liquid over medium-low heat until thickened and syrupy (about 15-20 minutes).
- To make whipped cream, whisk together the cream, cardamom, sugar, and vanilla until stiff peaks form.
- Serve the pears on plates, drizzled with the reduced sauce and garnished with pomegranate seeds and whipped cream on the side.
