Red Wine Poached Pears

Ingredients

The pears

  • 4–6 pieces small ripe pears

The poaching liquid

  • ½ bottle red wine
  • 1 piece orange
  • ¾ cup sugar, brown sugar or maple syrup
  • 1 tsp vanilla
  • 1 piece cinnamon stick
  • 4 pieces whole cloves
  • 1 tsp ground cardamom or crushed cardamom pods
  • ½ tsp nutmeg
  • 2 slices fresh red beet (optional)

The garnish

  • ½ cup pomegranate seeds

Cardamom Whipped Cream (optional)

  • ¼–½ tsp ground cardamom
  • 2 tbsp sugar
  • ½ tsp vanilla
  • 1 cup heavy whipping cream

Instructions

  1. Peel the pears and slice a little off the bottom for stability.
  2. In a pot, combine the wine, orange zest and juice, sugar, vanilla, cinnamon, cloves, nutmeg, cardamom, and beet slices. Bring to a simmer.
  3. Add the pears to the pot, bring to a boil, then reduce heat and simmer uncovered, turning pears occasionally, until tender (about 25 minutes).
  4. Transfer the pears to a plate and strain the poaching liquid.
  5. Reduce the strained liquid over medium-low heat until thickened and syrupy (about 15-20 minutes).
  6. To make whipped cream, whisk together the cream, cardamom, sugar, and vanilla until stiff peaks form.
  7. Serve the pears on plates, drizzled with the reduced sauce and garnished with pomegranate seeds and whipped cream on the side.
