Ingredients

Cranberry Filling

  • 1 ½ cups fresh cranberries
  • 6 tablespoons granulated sugar

Baked Pears

  • 4 medium red or green Bartlett pears
  • 2 tablespoons fresh lemon juice

Oat Topping

  • ¼ cup old-fashioned rolled oats
  • 2 tablespoons chopped walnuts or pecans
  • ½ teaspoon ground cinnamon
  • 1 tablespoon butter, melted
  • 1 tablespoon brown sugar

Goat Cheese Filling

  • 4 ounces goat cheese
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 425°F.
  2. In a saucepan, heat cranberries, ¼ cup water, and sugar until simmering for 7-8 minutes until thickened.
  3. Trim the pears and cut them in half lengthwise, hollowing out the centers and rubbing with lemon juice.
  4. Bake the pears for 17-20 minutes until tender.
  5. Prepare the oat topping by mixing oats, nuts, cinnamon, melted butter, and brown sugar, then spread it on a baking sheet.
  6. Toast the oat mixture in the oven for 8-10 minutes until golden.
  7. Beat the goat cheese and honey until smooth.
  8. Fill each pear half with the goat cheese mixture, then top with the cranberry mixture and oat crumble.
  9. Drizzle with additional honey if desired and serve immediately.
