Cranberry and Goat Cheese Stuffed Pears

Goat Cheese Filling

Instructions
- Preheat the oven to 425°F.
- In a saucepan, heat cranberries, ¼ cup water, and sugar until simmering for 7-8 minutes until thickened.
- Trim the pears and cut them in half lengthwise, hollowing out the centers and rubbing with lemon juice.
- Bake the pears for 17-20 minutes until tender.
- Prepare the oat topping by mixing oats, nuts, cinnamon, melted butter, and brown sugar, then spread it on a baking sheet.
- Toast the oat mixture in the oven for 8-10 minutes until golden.
- Beat the goat cheese and honey until smooth.
- Fill each pear half with the goat cheese mixture, then top with the cranberry mixture and oat crumble.
- Drizzle with additional honey if desired and serve immediately.
