Ingredients

Cranberry Pear Filling

  • 2 to 3 pounds ripe pears, peeled and diced
  • 3 cups fresh or frozen cranberries
  • 1 cup granulated sugar
  • 3 tablespoons tapioca flour, or ground instant tapioca or cornstarch
  • 1 tablespoon fresh orange zest
  • 1 pinch ground cinnamon
  • ¼ cup orange juice

Crumble Topping

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • cup granulated sugar
  • cup packed light or dark brown sugar
  • 14 tablespoons salted butter, melted

Instructions

  1. Preheat the oven to 375°F and grease a 9x13-inch baking pan.
  2. In a large bowl, mix the pears, cranberries, sugar, tapioca flour or cornstarch, orange zest, and cinnamon, then add the juice and stir to combine.
  3. Spread the fruit mixture evenly in the prepared pan.
  4. In a medium bowl, whisk together the flour, baking powder, salt, granulated sugar, and brown sugar, then add the melted butter and stir until clumps form.
  5. Crumble the topping evenly over the fruit mixture.
  6. Bake for 45-50 minutes until bubbling and golden, then let it rest for 15 minutes before serving.
