Ingredients

Pear Cranberry Filling

  • 4 large Bartlett pears
  • 1 cup fresh or frozen cranberries
  • cup honey
  • 3 tablespoons arrowroot starch or cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon ground ginger
  • ¼ teaspoon cinnamon

Gluten-Free Walnut, Oat and Almond Meal Topping

  • 1 cup old-fashioned oats
  • ½ cup almond flour
  • ½ cup chopped walnuts or pecans
  • cup coconut sugar or brown sugar
  • ¼ teaspoon fine salt
  • 4 tablespoons butter
  • 3 tablespoons plain yogurt

Instructions

  1. Preheat the oven to 350°F and mix the filling ingredients in a baking dish.
  2. Optionally, brown the butter in a saucepan for added flavor.
  3. In a bowl, combine the topping ingredients and mix in the yogurt and butter until moistened.
  4. Spread the topping over the filling without packing it down.
  5. Bake for 40 to 45 minutes until the filling bubbles and the topping is golden.
  6. Let it rest for 5 to 10 minutes before serving.
