Ingredients

The poached pears

  • 2 bags chai tea
  • 1 ½ cups boiling water
  • cup honey
  • 2 ripe but firm Bosc pears

The cinnamon whipped cream

  • ½ cup heavy cream
  • 1 tsp white sugar
  • ½ tsp ground cinnamon

Instructions

  1. Steep the chai tea bags in boiling water for 8–10 minutes and then remove them.
  2. Stir in the honey and add the pears, covering them with water.
  3. Bring the mixture to a simmer and cook the pears for 20–25 minutes until tender.
  4. Remove the pears and boil the poaching liquid until it thickens into a syrup, about 20–30 minutes.
  5. For the whipped cream, beat the heavy cream with sugar and cinnamon until soft peaks form.
  6. Serve the pears with warm poaching syrup and a spoonful of cinnamon whipped cream.
