Ingredients

Dry Ingredients

  • ½ cup zero calorie sweetener
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice

Wet Ingredients

  • ¾ cup 100% pureed pumpkin
  • 4 large eggs (beaten)
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter (melted)

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, combine the dry ingredients.
  3. In a separate bowl, mix the wet ingredients until well combined.
  4. Pour the wet mixture into the dry ingredients and stir to combine.
  5. Line a muffin tin with liners and pour the batter into the tins.
