Ingredients

  • 1 ¼ cups gluten-free flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • cup maple syrup
  • ¼ cup mashed banana
  • cup milk
  • 1 large egg
  • cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • 2 cups mixed berries

Instructions

  1. Preheat the oven to 350°F and grease an 8-inch or 9-inch cast iron skillet.
  2. In a small bowl, mix the flour, baking powder, and salt; set aside.
  3. In a large bowl, combine the maple syrup, mashed banana, milk, egg, melted oil or butter, and vanilla extract.
  4. Add the dry ingredients to the wet mixture and stir to combine.
  5. Fold in the mixed berries, cutting large strawberries in half if used.
  6. Transfer the batter to the skillet and bake for 50 to 55 minutes until light brown and a toothpick inserted comes out clean.
