Ingredients

The cake

  • 1 ¾ cups gluten free flour
  • 1 tsp baking soda
  • cup cocoa powder
  • ½ tsp salt
  • 1 cup pitted cherries
  • ¼ cup water
  • 2 large eggs
  • 1 cup pure maple syrup
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract

The topping

  • 2 tbsp maple syrup
  • 1 ounce dark chocolate
  • 1 tbsp coconut oil
  • 2 cups pitted cherries

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch round cake pan.
  2. In a small bowl, whisk together the flour, baking soda, cocoa powder, and salt.
  3. Blend 1 cup of pitted cherries with ¼ cup water until finely chopped.
  4. In a large bowl, mix the cherry mixture with eggs, maple syrup, coconut oil, and vanilla extract.
  5. Combine the dry ingredients with the wet mixture and stir until combined.
  6. Transfer the batter to the prepared pan and bake for about 40 minutes, or until a toothpick comes out clean.
  7. Allow the cake to cool on a wire rack.
  8. While cooling, heat maple syrup, chocolate, and coconut oil in a double boiler until melted.
  9. Drizzle the chocolate mixture over the cake and top with the remaining pitted cherries.
