Instructions
- Preheat the oven to 350°F and grease a 9-inch round cake pan.
- In a small bowl, whisk together the flour, baking soda, cocoa powder, and salt.
- Blend 1 cup of pitted cherries with ¼ cup water until finely chopped.
- In a large bowl, mix the cherry mixture with eggs, maple syrup, coconut oil, and vanilla extract.
- Combine the dry ingredients with the wet mixture and stir until combined.
- Transfer the batter to the prepared pan and bake for about 40 minutes, or until a toothpick comes out clean.
- Allow the cake to cool on a wire rack.
- While cooling, heat maple syrup, chocolate, and coconut oil in a double boiler until melted.
- Drizzle the chocolate mixture over the cake and top with the remaining pitted cherries.
