Ingredients

The sauce

  • 1 cup light coconut milk
  • 2 tablespoons curry paste
  • 2 tablespoons soy sauce

The vegetables and tofu

  • 1 block tofu
  • 2 stalks green onions
  • 2 cloves garlic
  • 1 inch ginger
  • ¼ cup basil

For serving

  • 2 cups jasmine rice
  • 3 cups water
  • to taste salt

Instructions

  1. Prepare the jasmine rice by rinsing it well and cooking it with water and salt.
  2. Chop the green onions, mince the garlic and ginger, chop the basil, and cube the tofu.
  3. In a large skillet, heat some oil and sauté the garlic, ginger, and green onions.
  4. Add the soy sauce, curry paste, coconut milk, and tofu to the skillet.
  5. Stir in the basil and mix well.
  6. Serve the spicy tofu mixture over the cooked rice.
