Ingredients

The pudding

  • 4 cups Vegan Peanut Butter Pudding

The coconut whipped cream

  • 3 cups full-fat coconut milk or cream
  • to taste Stevia or powdered sugar

For serving

  • 32 homemade Vegan Vanilla Wafers
  • 4 small ripe bananas (divided, thinly sliced)
  • to taste crushed peanuts (optional)

Instructions

  1. Prepare and chill the Peanut Butter Pudding.
  2. Make a double batch of coconut whipped cream and chill.
  3. Mix the pudding with half of the coconut whipped cream in a bowl.
  4. Layer vanilla wafers in a 9x13 inch pan, then add a layer of sliced bananas.
  5. Top the bananas with the pudding-coconut mixture and smooth the top.
  6. Add the remaining coconut whipped cream on top.
  7. Cover and chill in the refrigerator for at least 4-6 hours or overnight.
  8. Before serving, top with sliced bananas, crushed wafers, and crushed peanuts if desired.
