Ingredients

The pudding

  • avocados ripe
  • 1 large ripe banana
  • ½ cup unsweetened cocoa or cacao powder
  • ½ cup salted creamy or crunchy peanut butter
  • ½ cup sweetener of choice (maple syrup, agave, date paste, or honey if not vegan)
  • ¼ cup almond milk or other non-dairy milk

For topping

  • to taste Coconut Whipped Cream (optional)
  • to taste additional peanut butter (for drizzling)

Instructions

  1. Blend all pudding ingredients in a food processor until creamy and smooth, adding more milk if needed.
  2. Adjust cocoa powder and sweetener to taste for desired richness and sweetness.
  3. Divide the pudding into serving glasses and cover with plastic wrap, pressing it down to prevent a skin from forming.
  4. Chill for a few hours or overnight.
  5. Before serving, top with coconut whipped cream and a drizzle of peanut butter.
