No Bake Chocolate Avocado Pudding

Ingredients

  • 1 small ripe avocado
  • cup thick white coconut cream
  • ¼ cup maple syrup or agave nectar
  • 1 small banana, mashed
  • cup unsweetened cocoa/cacao powder
  • 1 tablespoon cacao nibs or chocolate chips (optional)

Instructions

  1. Add the avocado and coconut cream to a food processor and pulse until combined.
  2. Add the maple syrup, banana, and cocoa powder, then blend for 15-30 seconds until smooth.
  3. If using, add the cacao nibs and blend again.
  4. Scoop the pudding into one large container or several mini containers.
  5. Cover with saran wrap, pressing down to avoid condensation.
  6. Refrigerate for at least 3 hours to set.
  7. Garnish with a mint leaf, coconut whipped cream, and a sprinkle of cocoa powder before serving.
