Ingredients

The pudding

  • ¾ cup packed avocado (from 1 medium avocado)
  • ¼ cup unsweetened cocoa powder
  • ¼ cup pure maple syrup
  • 2 tablespoons brown rice syrup
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoon natural smooth roasted almond butter
  • ½ teaspoon pure vanilla extract
  • ¼ plus ⅛ teaspoon fine sea salt

For serving

  • to taste Coconut Whipped Cream
  • to taste Fresh berries
  • to taste Finely chopped almonds or other nuts

Instructions

  1. Combine all pudding ingredients in a food processor and blend until smooth.
  2. Taste and adjust salt and sweetener as needed.
  3. Transfer to an airtight container and chill for 1 to 2 hours or enjoy immediately.
  4. Serve in bowls topped with Coconut Whipped Cream, fresh berries, and nuts.
