Dairy Free Cream of Mushroom Soup

Ingredients

The soup base

  • 1 cup chopped sweet or yellow onion
  • 1-1 ½ teaspoons sea salt
  • 3 medium cloves garlic
  • 1 cup chopped red or Yukon gold potatoes
  • 4-5 cups veggie broth
  • ½-1 cup raw cashews
  • 5 cups sliced button mushrooms
  • ½ cup white wine or sherry

Seasonings

  • 1-2 tablespoons fresh thyme
  • ¼ teaspoon ground black pepper
  • 2-3 teaspoons lemon juice

Instructions

  1. Sauté half of the onions and half of the salt with oil or broth until soft.
  2. Add garlic and potatoes, sauté until garlic is fragrant.
  3. Add 2 cups of broth, cover, and simmer until potatoes are soft.
  4. Blend the potato mixture with cashews until smooth.
  5. Sauté the mushrooms, remaining onions, wine (or broth), remaining salt, and thyme until mushrooms are softened.
  6. Combine the blended soup with the remaining broth and mix well.
  7. Simmer, taste, and adjust salt if needed. Garnish and serve.
