Dairy Free Cream of Mushroom Soup
Ingredients
The soup base

chopped sweet or yellow onion

sliced button mushrooms

white wine or sherry

Instructions
- Sauté half of the onions and half of the salt with oil or broth until soft.
- Add garlic and potatoes, sauté until garlic is fragrant.
- Add 2 cups of broth, cover, and simmer until potatoes are soft.
- Blend the potato mixture with cashews until smooth.
- Sauté the mushrooms, remaining onions, wine (or broth), remaining salt, and thyme until mushrooms are softened.
- Combine the blended soup with the remaining broth and mix well.
- Simmer, taste, and adjust salt if needed. Garnish and serve.
