Creamy Mushroom Soup

Instructions
- Heat olive oil or vegan butter in a large pot over medium-high heat.
- Add mushrooms, garlic, onion, salt, and pepper; sauté until mushrooms release their juices, about 8 minutes.
- Pour in vegetable broth and coconut milk; add thyme and bring to a boil, then simmer for 15 minutes.
- Scoop out 2 cups of the soup and blend until smooth, then return to the pot.
- Serve the soup with your favorite toppings.
