Ingredients

  • ½ tablespoon olive oil or vegan butter
  • 16 ounces mushrooms, sliced
  • 8 cloves garlic, minced
  • ½ large onion, finely diced
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 3 cups vegetable broth
  • 1 can coconut milk
  • 4 sprigs thyme

Instructions

  1. Heat olive oil or vegan butter in a large pot over medium-high heat.
  2. Add mushrooms, garlic, onion, salt, and pepper; sauté until mushrooms release their juices, about 8 minutes.
  3. Pour in vegetable broth and coconut milk; add thyme and bring to a boil, then simmer for 15 minutes.
  4. Scoop out 2 cups of the soup and blend until smooth, then return to the pot.
  5. Serve the soup with your favorite toppings.
