Ingredients

The mushrooms

  • 10 ounce cremini mushrooms, sliced

The sauce

  • 1 tablespoon olive oil
  • 4 cloves garlic, chopped
  • 2 teaspoon fresh chopped thyme
  • ½ cup canned coconut milk, blended
  • to taste sea salt and pepper

Instructions

  1. Heat olive oil in a medium non-stick sauté pan over medium heat.
  2. Add the sliced mushrooms and cook for about 10 minutes, stirring occasionally until browned.
  3. Season with salt and pepper, then add the chopped garlic and cook for another minute until fragrant.
  4. Pour in the blended coconut milk and add the fresh thyme, cooking for an additional two minutes until the coconut milk thickens.
  5. Adjust seasonings as needed, then serve and enjoy.
