Creamy Garlic Mushrooms

Instructions
- Heat olive oil in a medium non-stick sauté pan over medium heat.
- Add the sliced mushrooms and cook for about 10 minutes, stirring occasionally until browned.
- Season with salt and pepper, then add the chopped garlic and cook for another minute until fragrant.
- Pour in the blended coconut milk and add the fresh thyme, cooking for an additional two minutes until the coconut milk thickens.
- Adjust seasonings as needed, then serve and enjoy.
