Instructions
- Preheat the oven to 350°F and prepare a 9x14 sheet pan with parchment paper and nonstick spray.
- In a large bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract.
- In a separate medium bowl, mix the almond flour, cocoa powder, baking soda, and salt.
- Combine the dry ingredients with the wet ingredients and whisk until well mixed.
- Pour the batter into the prepared sheet pan and bake for 18-20 minutes or until a toothpick comes out clean.
- Allow the cake to cool while preparing the frosting.
- Melt the chocolate chips and coconut cream together in the microwave in 30-second increments, stirring in vanilla once melted.
- Frost the cooled cake and optionally dust with powdered sugar before serving.
