Baked Tonkatsu

Ingredients

  • 200 g thinly cut pork loin
  • 2 tsp cornstarch
  • 1 unit egg
  • 20 g Japanese panko bread crumbs

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. Cook the panko bread crumbs in a frying pan over low heat until golden brown, then set aside.
  3. Wrap the pork loin in plastic wrap and microwave for 1 minute to slightly cook the meat.
  4. Remove the wrap and soak up excess liquid from the pork with a paper towel.
  5. Sprinkle cornstarch over both sides of the pork using a sifter.
  6. Crack the egg in a bowl, scramble it slightly, and dip the pork to coat.
  7. Coat the pork in the cooked panko bread crumbs.
  8. Place the coated pork cutlets on a baking tray and bake for about 10-15 minutes.
  9. Serve with rice, miso soup, and vegetables.
