Instructions
- Preheat the oven to 180°C (356°F).
- Cook the panko bread crumbs in a frying pan over low heat until golden brown, then set aside.
- Wrap the pork loin in plastic wrap and microwave for 1 minute to slightly cook the meat.
- Remove the wrap and soak up excess liquid from the pork with a paper towel.
- Sprinkle cornstarch over both sides of the pork using a sifter.
- Crack the egg in a bowl, scramble it slightly, and dip the pork to coat.
- Coat the pork in the cooked panko bread crumbs.
- Place the coated pork cutlets on a baking tray and bake for about 10-15 minutes.
- Serve with rice, miso soup, and vegetables.
