Ingredients

The pork

  • 3 pieces pork sirloin steak

The batter

  • 1 large egg
  • ¼ cup water
  • 1 tbsp Japanese mayonnaise
  • 4 tbsp plain flour

The coating

  • 3 cups panko crumbs

The frying oil

  • 50 g deep frying oil

The accompaniments

  • 200 g cabbage
  • 6 pieces cherry tomatoes
  • 3 pieces shiso leaves

Instructions

  1. Prepare the pork by cutting slits along the edges to prevent curling and flattening it if too thick. Season with salt and pepper.
  2. Make the batter by mixing the egg, water, and mayonnaise in a bowl, then adding flour and mixing briefly.
  3. Coat the pork in the batter, remove excess, and then coat with panko crumbs on all sides.
  4. Heat the oil in a deep frying pan to 170°C (338°F). Prepare a wire rack lined with paper towels.
  5. Carefully place one piece of pork in the hot oil and fry without moving it until golden brown, then flip and cook for an additional 2-3 minutes.
  6. Drain the fried pork on the paper towel-lined rack and repeat for the remaining pieces.
  7. Slice the fried pork into strips and serve with shredded cabbage, shiso leaves, cherry tomatoes, and tonkatsu sauce.
