Instructions
- Prepare the pork by cutting slits along the edges to prevent curling and flattening it if too thick. Season with salt and pepper.
- Make the batter by mixing the egg, water, and mayonnaise in a bowl, then adding flour and mixing briefly.
- Coat the pork in the batter, remove excess, and then coat with panko crumbs on all sides.
- Heat the oil in a deep frying pan to 170°C (338°F). Prepare a wire rack lined with paper towels.
- Carefully place one piece of pork in the hot oil and fry without moving it until golden brown, then flip and cook for an additional 2-3 minutes.
- Drain the fried pork on the paper towel-lined rack and repeat for the remaining pieces.
- Slice the fried pork into strips and serve with shredded cabbage, shiso leaves, cherry tomatoes, and tonkatsu sauce.
