Ingredients

The waffles

  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour or whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon zest
  • 3 large eggs (beaten)
  • 4 tablespoons unsalted butter (melted and slightly cooled)
  • 2 cups buttermilk (at room temperature)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon poppy seeds
  • 1 teaspoon poppy seeds

The lemon whipped cream

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 tablespoon lemon zest
  • 2 teaspoons fresh lemon juice

Optional toppings

  • to taste blackberries
  • to taste maple syrup

Instructions

  1. Preheat the waffle iron according to the manufacturer's directions.
  2. In a large bowl, whisk together the flours, baking powder, baking soda, and salt.
  3. In a small bowl, combine the lemon zest and sugar, then rub together until fragrant and mix with the dry ingredients.
  4. In a medium bowl, beat together the eggs, melted butter, buttermilk, lemon juice, and vanilla.
  5. Add the wet ingredients to the dry ingredients and stir until just combined, then gently fold in the poppy seeds.
  6. Pour the batter onto the hot waffle iron and cook until golden brown and easily removed.
  7. To make the lemon whipped cream, combine all ingredients and beat until soft peaks form.
  8. Serve the waffles warm with lemon whipped cream, blackberries, and maple syrup if desired.
