Instructions
- Preheat the waffle iron.
- Mix all the dry ingredients in a large bowl, including the lemon zest.
- In a separate bowl, mix together the wet ingredients.
- Combine the wet and dry ingredients and stir until just combined.
- Grease the waffle iron with cooking spray and cook according to the manufacturer's instructions, using about ½ cup of batter per waffle.
