Ingredients

The casserole

  • 4 cups cooked, diced or shredded chicken
  • 3 cups cauliflower rice
  • 1 cup sliced green onions

Creamy Buffalo Ranch Sauce

  • ½ cup Whole30 mayonnaise
  • ¼ cup Whole30 ranch dressing
  • ¼ cup coconut cream
  • ½ cup hot sauce
  • 1 teaspoon garlic powder
  • ½-1 teaspoon salt

To serve

  • as needed celery sticks
  • as needed sliced green onions
  • as needed chopped fresh parsley
  • as needed ranch dressing

Instructions

  1. Preheat the oven to 350º F.
  2. In a large bowl, combine the chicken, cauliflower rice, and green onions.
  3. In a medium bowl, whisk together all the sauce ingredients.
  4. Pour the sauce over the chicken-rice mixture and toss to coat well.
  5. Transfer the mixture to a 9x9 inch baking dish.
  6. Bake for 30 minutes or until bubbly.
  7. Garnish with more ranch dressing, green onions, and parsley before serving with celery sticks.
